Roasted Chicken with Vegetables

Ingredients:

  • ➢ 1 whole chicken

  • ➢ 2 cups Global Premier California Blend (broccoli, carrots, and cauliflower)

  • ➢ 3 tbsp butter

  • ➢ 2 tbsp olive oil

  • ➢ 1 tsp paprika

  • ➢ 1 tsp garlic powder

  • ➢ Salt and pepper to taste

  • ➢ Juice of ½ lime

Directions:

  • Preheat the oven to 200°C (400°F)
  • Place the chicken on a baking sheet or in a roasting pan.
  • Mix the butter, olive oil, paprika, garlic, salt, pepper, and lemon juice.
  • Rub this mixture all over the chicken, including under the skin to keep it juicy.
  • Roast for 1 hour and 15 minutes, or until it is golden brown and juicy.
  • Meanwhile, sauté the Global Premier California Blend with a touch of butter for 5–7 minutes.
  • Serve the roasted chicken accompanied by the vegetables.
