Roasted Chicken with Vegetables
Ingredients:
➢ 1 whole chicken
➢ 2 cups Global Premier California Blend (broccoli, carrots, and cauliflower)
➢ 3 tbsp butter
➢ 2 tbsp olive oil
➢ 1 tsp paprika
➢ 1 tsp garlic powder
➢ Salt and pepper to taste
➢ Juice of ½ lime
Directions:
- Preheat the oven to 200°C (400°F)
- Place the chicken on a baking sheet or in a roasting pan.
- Mix the butter, olive oil, paprika, garlic, salt, pepper, and lemon juice.
- Rub this mixture all over the chicken, including under the skin to keep it juicy.
- Roast for 1 hour and 15 minutes, or until it is golden brown and juicy.
- Meanwhile, sauté the Global Premier California Blend with a touch of butter for 5–7 minutes.
- Serve the roasted chicken accompanied by the vegetables.
