Mango Cheesecake

Creamy, fruity, and glazed. Baked cheesecake with a graham cracker crust, topped with a homemade Global Premier mango jam.

Mango Cheesecake

Ingredients:

  • CRUST
  • ➢ 200g Maria cookies (or graham crackers), crushed

  • ➢ 80g butter, melted

  • FILLING
  • ➢ 400g cream cheese

  • ➢ 200ml heavy cream

  • ➢ 100g sugar

  • ➢ 2 eggs

  • JAM
  • ➢ 2 cups Global Premier mango

  • ➢ 80g sugar

  • ➢ Juice of ½ lime

Directions:

  • Mix the crushed cookies and butter to form the crust.
  • Beat the cream cheese, heavy cream, sugar, eggs, and vanilla.
  • Pour the mixture over the crust
  • Bake for 50 minutes at 170°C (340°F).
  • Let it cool and then refrigerate.
  • For the jam, cook all ingredients over medium heat for 15–20 minutes until thickened.
