Blueberry Muffins

Blueberry muffins
Ingredients:
➢ 2 cups Global Premier blueberries
➢ 3 eggs
➢ 1 cup white sugar
➢ 150g Greek yogurt
➢ ¼ cup whole milk
➢ 114g butter
➢ 1 ½ cups flour
➢ 2 tsp baking powder
➢ 1 lemon
Directions:
- Whisk the eggs and sugar together until combined; add the Greek yogurt and a splash of milk.
- Incorporate the melted butter (melted and at room temperature) and mix.
- Sift the flour over the mixture and stir gently.
- Bake for 50 minutes at 170°C (340°F).
- Gently fold in the blueberries.
- Fill the muffin tins and bake for 25–30 minutes at 180°C (350°F).
Notes
- To prevent the blueberries from sinking to the bottom of the tins or staining the entire batter purple, you can toss them in a little flour before folding them in. Also, remember to use very gentle folding movements so you don't break the fruit.
- It is crucial that the melted butter is at room temperature before mixing it with the eggs and yogurt. If it is too hot, it could "cook" the eggs prematurely or alter the creamy consistency provided by the Greek yogurt.
